Created as a refined yet vibrant dinner experience, SABO captures the spirit of modern luxury dining perfectly: sophisticated without stiffness, theatrical without excess, glamorous without trying too hard. Over the past year, the restaurant has become one of Marrakech’s most coveted tables, drawing guests into a world where candlelight, music, exquisite cuisine and warm Moroccan opulence blend into something deeply cinematic.

For this anniversary celebration, Jean-François Piège revives the restaurant’s original inauguration menu – a decadent homage to generosity and pleasure that reflects the very essence of SABO. Signature creations return to the table, including the now-iconic croq’ caviar mozzarella, confit lamb shoulder served by the spoon with garden herbs, and delicate strawberries and raspberries bathed in champagne.

In a special nod to his Paris institution Le Grand Restaurant, Piège will also present one of his most celebrated dishes: local sea bass cooked slowly to perfection with concentrated caper leaves – a plate that perfectly captures the precision, restraint and emotion defining his cuisine.
