Ibiza rarely slows down. It seduces, it dazzles, it pulls you into its rhythm almost immediately. And yet, somewhere between the late afternoon heat and the first note of the night, there is a fleeting moment where everything softens.

I arrived at Montesol in that exact in-between. Set at the edge of Ibiza town, where the marina’s movement meets the quiet strength of Dalt Vila, the hotel carries a certain presence – not loud, not performative, but deeply anchored. Under the Experimental Group, it has been reimagined with a rare sense of restraint. The kind of elegance that doesn’t try to convince you.

It simply exists.

Inside, the design speaks in a language that feels unmistakably Ibiza, but refined. Natural textures, sun-faded tones, soft contrasts. There is something almost cinematic in the way light moves through the space. Nothing is overdesigned, yet everything feels intentional. A balance between heritage and modernity that is difficult to achieve, and even harder to sustain.

My room felt like an extension of that philosophy.

Spacious, serene, with that same quiet attention to detail. But what truly surprised me was the minibar – often overlooked, here it becomes an experience in itself. Alongside the expected selection, three ready-to-drink cocktails are offered, perfectly balanced, as if the evening had already been prepared for you in advance.

It is a small detail. But at Montesol, details are never accidental.

The rooftop, newly opened, is where the hotel reveals its full dimension.

I went up just before sunset, without expectations, and stayed far longer than planned. From above, Ibiza rearranges itself into something almost unreal. The old town unfolds in layers, its white façades catching the last light, slowly turning gold, then amber, then dissolving into something softer.

And then the music begins.

Not intrusive, never overpowering – carefully curated DJ sets that seem to follow the rhythm of the sky rather than compete with it. The atmosphere builds gently. A glass in hand, the horizon in front of you, the sound perfectly placed somewhere between presence and distance.

This is not a rooftop that tries to impress.

It is one you feel.

Mornings arrive differently here.

There is something about Montesol’s breakfast that feels almost indulgent in its simplicity. Widely considered among the best in the city, it is a moment you don’t rush. I found myself returning to the same favorites – an acai bowl, perfectly fresh, almost luminous in its colors. A toast with bacon and eggs Benedict, rich yet balanced. And the avocado toast, elevated without losing its essence.

Each plate feels considered, but never overworked. Exactly in line with the spirit of the place.

Later in the day, I had to try the Andalusian calamari – a classic, reinterpreted with precision. Light, crisp, accompanied by a homemade sauce that lingers long after the last bite. The kind of dish that feels simple until you realize how rarely it is done this well.


What Montesol understands – instinctively – is that luxury does not lie in accumulation.

It lies in editing.

In knowing when to stop, when to leave space, when to let a moment exist on its own.

As the sun disappears and the city begins to glow, something shifts again. The energy changes, but the feeling remains. A certain calm, almost unexpected in Ibiza, that follows you long after you leave the rooftop, the room, the hotel itself.

Montesol does not try to redefine the island. It reveals a version of it you didn’t know you were looking for.
